Homemade flapjacks

These tasty homemade flapjacks are packed with healthy oats, fruits, nuts and seeds. Don’t be surprised if everyone comes back for more!

Flapjacks

(Makes approx 32)

125g unsalted butter

140g brown sugar

300g porridge oats

1 tblspoon honey

2 tblspoons golden syrup

200g dried fruit-a mixture of sultanas, raisins, cranberries, apricots etc

100g nuts and seeds- a mixture of sesame, sunflower, pumpkin seeds and chopped brazil or walnuts.

100g stem ginger, roughly chopped

method

Preheat your oven to 180 degrees C/ Gas 4.

Butter a 22 x 30cm baking tray.

1. Heat the butter, sugar, golden syrup and honey in a large saucepan until the butter has melted.

2. Add the oats, dried fruits, nuts seeds and ginger and stir well.

Spoon the mixture into the baking tray and spread out evenly.

Press the mixture down firmly with the back of a large spoon.

3. Place the flapjacks into the preheated oven and bake for 20-25 minutes, or until golden brown. Leave to cool before cutting into squares.

Don’t worry if they are a little softer than shop bought ones- the honey makes them lovely and gooey. Enjoy!
